Vicky's Buffalo Chicken Dip Recipe

Vicky's Nerdy N Dirty Blog

November 14, 2017

Hey guys! So this blog is going to be a little different, because it’s going to be a recipe!

Yesterday on the show we talked about the most Googled Thanksgiving recipes per state and when Steve talked about how weird some states searched for “Buffalo Chicken Dip”. When I mentioned I don’t blame them because it’s so tasty and how I make great BC Dip, the show demanded proof.

They doubted my cooking prowess and the epic-ness that is my BC Dip, so naturally, I had to make them eat their words, and my cooking!

And they did! It was a hit!

Everyone keeps going back, they can’t stop eating! Even though BJ said he’s had better, I know he just doesn’t want to admit the tastiness that is this dish!

After the pictures and videos, everyone messaged in asking for the recipe. To be honest, I usually eyeball it; there is no wrong way to make this so here is sort of what I did.

Ingredients

  • 2 logs of soften cream cheese (16 oz total)
  • 2 cups of shredded Mexican blend cheese (or any cheese you want, Monterey Jack, blue cheese, mozzarella cheese, etc ,all work)
  • 2 cups of cooked chicken (shredded chicken breast is best but you can use canned chicken, just make sure you cook it with some garlic and such to give it some flavor)
  • 2 cups of Ranch dressing (you may sub out Blue cheese dressing or do half dressing, half sour cream)
  • 2 cups of your favorite buffalo sauce (you may add more or less depending on your spicy preference

Mix all the ingredients together in a bowl. Spoon into a baking dish and cook for about 15 minutes at 350 degrees in the oven or until bubbly and gooey! Serve with your favorite tortilla chips, celery/carrot sticks, or toasty bread and also feel free to get nuts with toppings! Bacon, green onions, it all works!

This can be made ahead and put in the fridge then bake when ready! I love it for football events, board game days, potlucks, holidays, pretty much any major food function.

Hope you enjoyed, and let me know how yours comes out!
